Hydraulic control
The TSHY supports professionals seeking more power and working comfort. Its hydraulic movement guides the blade block consistently to tenderise meat without crushing or tearing it.

Automatic adjustment
The TSHY automatically detects cut thickness and adjusts its movement to preserve shape and structure. The meat is neither crushed nor structurally damaged, and no adjustment is required from the operator.
For a cut up to 60 mm, the TSHY performs its full cycle and tenderises the entire thickness.
For a thicker cut, the TSHY automatically works the first 60 mm without compressing, deforming or tearing the fibres. Simply turn the cut over to tenderise the other side.
Operator protection
The transparent U-shaped plexiglass cover fully isolates the working area. Hands therefore cannot reach the blades during the cycle.
Inaccessible areaThe U-shaped cover forms a physical barrier around the blade block to prevent hand access.
Protected startThe cycle starts when the operator fully lowers the U-shaped cover.
Automatic return to the upper positionAt the end of the cycle, the head always returns to the top and stops there, providing free access to remove or reposition the meat.
Tool-free access
Simply pulling the tab allows the complete protective cover to slide upwards. Once released, the tab holds it in the upper position: the blade block, meat stripper plate and spacer become easy to access without having to put the cover down elsewhere in the workshop.

Pull the tab to release the cover’s sliding movement.

Release the tab: the cover remains locked in the raised position and attached to the machine.

For cleaning or maximum access, the cover can also be removed completely, still without tools.
All access, disassembly and cleaning operations must be performed with the machine stopped and unplugged.

General viewProven technology
The 544 high-precision blades form the heart of the TSHY. Their design, refined over several years, distributes micro-incisions consistently while preserving the meat’s appearance, flavour and juices.

Made from high-quality rolled stainless steel with a thickness of 0.8 mm, the blades have spring properties that help them remain as straight as possible. Their burr-free finish respects the fibres and leaves virtually no visible marks beyond the micro-incisions needed for tenderising.
Sharpening on CNC machines ensures a precise, repeatable bevel, blade after blade. The TSHY’s hydraulic power can therefore rely on cutting technology that matches its performance.
Over 20 000 blades are manufactured each year to the same exacting standard.
